So for the past 5 days I've been eating only Paleo. Let me just tell you, it has been HARD! I'm already gluten free so you would think it wouldn't be so bad right? Wrong! I've had headaches and sugar/carb withdrawals! But I've been doing pretty well and also trying to walk after dinner so I'm proud of that. I'm extremely addicted to Dunkin Donuts Iced coffee! Coconut toasted almond is my weakness. It's been a battle trying to figure out how to make my coffee paleo. First I tried lowering my cream and sugar content for a few days, then I got rid of the sugar altogether and used some organic agave as a sweetener. It was pretty good, but not great! I found myself in the grocery store scouting out the organic section trying to find a decent non dairy creamer. And then I saw it! French Vanilla Coconut Milk Creamer! Even the name sounded sexy! I bought it and the next day on my way to work took it with me in my car as I went through Dunkin Donuts and bought my medium coconut toasted almond iced coffee. I added my coconut creamer, gave it a stir, and took a sip. OMG! It was liquid heaven in a cup! I've finally found something that goes in my coffe without adding sugar or sweeteners and it won't make me fat! Hallelujah! Now don't get me wrong, it's not as good as the real cream and sugar, but it's pretty darn good compared to others I've tried to subsitute in my coffee. If you haven't tried it yet, go get some and do it now. You won't regret it!
